GILLIAN

A career in food was on Gillian’s mind from a young age. She grew up reading cookbooks and serving as her mother’s sous chef. After earning a Bachelor of Arts in Political Science from the University of Rhode Island, Gillian worked as a freelance food journalist and public relations specialist for the online grocery delivery company, FreshDirect.

When she decided she wanted to work in the kitchen, Gillian earned a culinary certificate from the Natural Gourmet Institute in New York. She cut her teeth as a line cook at Reynard at the Wythe Hotel in Williamsburg before joining the What We Eat team in 2017. While she’ll try any food at least once, she’s a firm believer in the concept of food as medicine and is eager to help her clients eat well without sacrificing variety or flavor!

Favorite foods to cook: Whether it’s a big bowl of curry or miso soup, Gillian can’t resist anything with spicy or umami flavors. So it’s no surprise that her favorite vegetable is mushrooms. Shiitake bacon, anyone?

Last Meal: A big bowl of stir-fried noodles with a side of roasted veggies covered in miso.
