Time to turn on the oven. We’re making Cinnamon Apple Bread.

Up until this point my time spent baking sweet breads could be broken down into the following ratios:

  • 90% banana 
  • 5% zucchini
  • 5% pumpkin

As you can see, banana bread has been the OG around here not only because it’s f-ing delicious, but because it’s also great way to use up an overload of ripe bananas. Tied for second and third place: zucchini and pumpkin bread. Apple bread on the other hand has never even been on my radar. Am I alone here? How come apple bread has never had its viral moment? Don’t we all have a glut of apples on hand in the fall/winter too?

Well things are a’changing in my kitchen. While I am pretty sure this post won’t be the one to take apple bread viral, it’s no fault of the recipe. It’s f-ing delicious.

This Cinnamon Apple Bread is highly spiced, just sweet, very moist, and super apple-y from the addition of both applesauce and diced apples. I also love splitting the flour 50/50 between all purpose/whole wheat. The former protects it from being too dense and the latter lends a little earthiness/nuttiness. It definitely gives apple cider donut vibes.

Ingredients

  • Non-stick cooking spray (or extra butter/flour)
  • 1 stick unsalted butter, melted (1/2 cup)
  • 1/2 cup granulated sugar (100 g) + 1 tbsp for topping (could also use sugar in the raw on top)
  • 1 egg
  • 1 cup plain applesauce
  • 1/2 cup whole milk yogurt
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp kosher salt (I use Diamond Crystal – use 1/2 tsp if Morton’s or table salt)
  • 2 tsp cinnamon
  • 1 cup all purpose flour (120 g)
  • 1 cup whole wheat flour (115 g)
  • 1 large apple, peeled, cored and diced into 1/4 in pieces

Method

  1. Preheat oven to 350 and line a loaf pan with parchment paper. Spray with non-stick cooking spray (or grease with butter/flour).
  2. In a large bowl, mix together 1 stick melted butter and 1/2 cup sugar. Once cool to the touch, whisk in 1 egg. Next, whisk 1 cup applesauce, 1/2 cup yogurt and 1 tsp vanilla extract. Sprinkle 1 tsp each baking soda and powder, 1/2 tsp kosher salt and 2 tsp cinnamon over top of wet ingredients and whisk until thoroughly combined again. Finally, add in flour and mix until mostly combined before folding in diced apples. Mix only until no clumps of flour remain.
  3. Pour batter into prepared loaf pan and bake for 60-65 minutes until a tooth pick comes out clean. Cool for 20 minutes in the pan before turning out to cool for an additional 45 minutes or so (if you can wait). Enjoy for breakfast or as a snack. I love it alongside a bowl of plain whole milk yogurt and a dollop of nut butter.
