DOCTORED UP PESTO PASTA

CONFESSION TIME: I am so not above store-bought pesto…for myself or for personal chef clients. There are many worthy fresh prepared brands in the refrigerated section of the grocery store.

I do like to doctor up store-bought pesto pastas up with roasted veggies like the red onion and zucchini here, then big flavor boosters like olives and shaved parm. Add some rinsed, canned cannellini or butter beans, or chickpeas, a few handfuls of arugula if you want and you have yourself a perfectly rounded meal. Dinner with less that 20 min of effort.

Pesto, Fried Halloumi, Summer Tomatoes and Stone Fruit Toasts

These nutty, salty, sweet summer toasts are IT. Use store-bought pesto or go the extra mile and make the pistachio pesto at the bottom of the recipe. There are so many uses for that beyond this toast, including pestos, alongside grilled fish or chicken, dolloped into a pot of beans, etc.

Move over BLT. PHTN (pesto, halloumi, tomato, nectarine) is gunning for ya. Hmmmm, I admit that I need to work on my branding.

PASTA SALAD WITH CRUSHED WALNUTS AND MINT

Getting a head start on dinner in the early hours of the morning before The Littles wake up is a must. Morning prep might be as little as cutting up vegetables or marinating meat for the grill. If I’m feeling more ambitious, I’ll make something like this featured recipe: pasta salad with crushed walnuts and mint. It’s a one-dish meal that can be enjoyed straight from the fridge.
